Do you like pina coladas? And getting caught in the rain?

Well, I’m not a big fan of rain but I looooove a good summertime pina colada.

So, today I’m sharing my favorite recipe from Paula Deen with you.

Thirsty Thursday: Pina Colada

Servings: 4 servings
Prep Time: 5 min
Difficulty: Easy

1/2 cup rum
1/4 cup coconut milk
1/4 cup pineapple chunks
1/2 cup coconut cream
ice, enough to fill half the blender
slices of pineapple, optional for garnish
maraschino cherry, optional for garnish

Directions

 Mix ingredients in a blender and serve.

Optional: Garnish with a slice of pineapple or maraschino cherry.

Well, I’m plum-excited about today’s Thirsty Thursday recipe!

Plums have always been one of my favorite fruits – ever since I read The Very Hungry Caterpillar and plums were one of the featured food stars!

Is it just me or did that book always make you hungry?

I turned to Martha Stewart, of course, to find the perfect pretty plum recipe for Summer 2012.

We're plum excited for Martha's Plum Cocktails!

Plum Cocktails

(Makes 10 cocktails)

  • 1 1/4 cups sugar
  • 8 plums (red, yellow, or both), pitted and cut into 6 wedges each
  • 2 limes, cut into wedges
  • 10 ounces gin
  • Sparkling water

Directions

  1. Cook sugar and 1 1/2 cups water in a saucepan over medium heat, stirring occasionally, until sugar has dissolved. Bring to a boil. Stir in plums; remove from heat. Refrigerate syrup until cold.
  2. Fill 10 tall glasses with ice. Squeeze 1 lime wedge into each glass; add wedge to glass. Stir 1/4 cup syrup and 1 ounce gin into each glass. Add sparkling water to fill; stir. Garnish with plums. Serve.
